Half of the dinner menu, Day 1

Life has changed so quickly for us it's amazing that we haven't suffered whiplash during the process. We've gone from eating breakfast and a simple dinner of beanie weenie or fish sticks at the same time we've put in long hours around the house, to wonderful dinners of incredible variety with amazing service. (Think I squeezed enough superlatives into that sentence?). Honestly, two days into it, we're still a bit dazed. I don't want our friends at Chick-fila to have hurt feelings about this, because they're wonderful to us also, but, wow, we're certainly enjoying this.

I've put in a standing order for steamed spinach at breakfast (with scrambled egg beaters), and broccoli for dinner. Pair it with salmon and I'm a happy camper.

But there is a LOT to choose from, not only in the dining room where we enjoy most of our meals, but also in the Horizon Court buffet, the Cafe Caribe with its themed buffet dinners every night, and the International Cafe with pastries, a breakfast sandwich and yogurt for breakfast, and salads and soups and paninis the rest of the day. If none of those appeal, there's also the grill with burgers, hot dogs, chicken and brats serves poolside, and pizza and ice cream, also served poolside until midnight.

For some people, it can become a feeding-fest, but we have to be more careful. Eating mostly fruits, veggies and seafood, and easy on the alcohol, coupled with LOTS of walking and foregoing the elevators in favor of climbing up lots of flights of stairs will definitely help in that regard. Must. Stay. Disciplined.
